Blanc de Noirs is a type of white wine obtained from the fermentation of black grapes, but with the particularity that only the white grains present in the bunches of black grapes are used in the production.

This means that, unlike the more common red wine, Blanc de Noirs is not left in contact with the skins of the grapes during the fermentation process, which is the phase in which the red pigments are transferred to the must, giving the wine its characteristic pinkish or reddish colour.

To avoid the red color, only a small part of the must is used: the first press, completely colorless, is of the highest quality, and is obtained using from 10 to 30% of the total quantity of must

To obtain this quality of Pinot Noir must in our Istrian territory, the grapes must be harvested only in years with lower than average temperatures, harvested relatively early and processed very quickly. In our case, from the moment of collection to processing, up to a maximum of 1 hour.


The nose is struck by the scent of freshly crushed black grapes with notes of citrus and red fruits. You can perceive smells of light spices. The aroma is that of great wines. It is powerful, rich, full-bodied on the palate with buttery and honey notes. Blancs de Noirs are sparkling wines that you can combine with dishes of character, for example with platters of aged cheeses and tasty salami or fish and shellfish
